Kids Recipes: Mini Deep Dish Pizza Appetizer

I saw this recipe on the Rachael Ray Show and knew my kids would love it!  I modified the original recipe to make it easier, and substituted ingredients to suit my picky eaters.  I also used a cupcake tin instead of a muffin tin as suggested because I wanted them to be appetizer size, and used 1/2 of each biscuit per cup instead of 1/3 because we like our pizza doughy.  If you’re interested in the original recipe you can find it here

Ingredients:

1 can refrigerator biscuits (I used Pillsbury Butter Tastin’ Grands)
Cooking Spray
Mozzarella Cheese
Diced Green Pepper
Tomato Sauce

Directions:  Preheat your oven to 400. Spray cups of cupcake tin.  Cut biscuits into half and place the pieces into the cups of the cupcake tin making sure the dough goes all the way up the sides of the tin.  Place in oven and bake until done (around 8 - 10 minutes depending on your oven). 

When your biscuits are done, remove them from the oven.  (note: Because I wanted ours to have more dough the biscuits rose, so using the back of an ice cream scoop I had to press down the biscuits to make room for the sauce and toppings.) Fill each cup with tomato sauce, add green peppers and top with cheese.  Pop back in the oven until cheese is melted.  Remove from oven and enjoy!
