Vegetarian Recipe: Kung Pao Broccolli and Rice

I’m not sure if I’d call this a recipe since it’s basically just idiot proof cooking (my favorite kind!) but for lack of a better term I guess that’s what we’ll call it. This is a quick and easy vegetarian meal that even my kids will eat, so you’ve gotta love that! It’s got all “regular” ingredients and takes around 20 minutes from start to finish. Here’s what you’ll need:
1 packet of Sun Luck Kung Pao seasoning mix
1 1/2 lbs fresh broccoli cut into florettes
2 TBS Olive Oil
1 TBS Soy Sauce
3/4 C Water
1 tsp Sugar (I used Splenda)
2 Cups of Rice (your favorite variety)
Combine Kung Pao mix with sugar, soy sauce, and water. Set aside. Heat oil in a large skillet and add in brocolli florettes. Stir fry the broccoli until almost tender (about 2-3 minutes). Add sauce mix and stir fry until liquid has thickened. Serve over plain rice or add a little soy sauce and enjoy.

I don’t know what that seassoning is, I wonder if there is a substitute?

I found the seasoning in the rice aisle at the grocery store. I would imagine that any of the bottled sauces would work for this recipe too or if you could try making your own kung pao sauce (I’m not too handy in the kitchen so that’s why I use a sauce packet!)

Idiot proof cooking is always good. I will have to look for that seasoning. My daughter likes broccoli and rice, so it sounds like a winner.
