Vegetarian Recipe: Mexican Baked Potato Skins

Potato skins are always a hit around here and this recipe for Mexican Baked Potato Skins was no exception!  Aside from the fact that my kids will eat them, another thing I like about making these is that I’m not wasting any food.  I save the “innards” of the potato and will make mashed potatoes sometime in the next few days to go with dinner.

Cooking Tip:  When scooping out the potatoes, I found it easiest to cut them into quarters, stand them up on their sides and scoop out the insides.

Ingredients:

6 Medium Sized Potatoes
Salsa
Vegetarian Cheddar Cheese (Cabot is my favorite brand)
Butter Spray
Vegetarian Sour Cream

Salsa Recipe:

One of these days I’ll get my hands on a “real” fresh salsa recipe (anyone care to share theirs?!), I like my fresh salsa herby, as opposed to spicy and just haven’t come across a recipe I like yet.  Until then, I use 1lb of tomatoes and a salsa seasoning packet.  If you prefer, you can use jar salsa.

Directions:  Preheat your oven to Broil.  Since I’m lazy I like to save time, I microwave the potatoes.  Wash off the dirt and poke each potato a few times with a fork.  Wrap in damp paper towels and microwave for 15-20 minutes or until potatoes are tender.  Once they are done, cut the potatoes into quarters and using a spoon scoop out 2/3 of the innards.  Place your potato pieces on a baking sheet bottom side up and spray with butter.  Broil for 4-5 minutes and remove.  Flip potatoes over, sprinkle with salt and pepper then add salsa and cheese.  Pop back into the oven and broil until cheese is melted.  Serve with sour cream.
